Black Bean Soup

Ingredients...
- 1 lb. dry black beans
- 1 large onion, finely chopped
- 1 carrot, finely chopped
- 6 C. chicken stock
- 3/4 C. diced ham
- 1 tsp. Peppercorns
- 4 cloves garlic
- 2 bay leaves
- 1/4 C. butter or margarine, melted
- 1 t. ground cumin
Instructions...
1. Soak beans in cold water overnight, filling pot with water to about 3 inches
above beans. Drain beans; set aside. OR put beans in a llarge pot of boiling water and boil for 40 mins, then wash
beans.
2. Put all ingredients in a crock pot and cook on High for 5 hours.
3. Hunt down and remove bay leaves. Serve
