Prepare Basmati rice with this one...

- 1 lb. mungo beans (urid beans or urid dal)
- 1 ts chili powder
- 1 ts cumin
- 1 ts coriander
- 1 ts tumeric
- 1 ts salt
For sauce to go with it...
- 1 large onion
- 4 T canola, olive oil, or margarine
- 4 red chili peppers
- 1 bay leaf
- 3 chopped curry leaves
- 1/3 cup cilantro
- 1/2 ts fenugreek seeds or powder
- 1/2 ts mustard seeds
- 1/2 ts coriander seeds
- 1/2 ts cumin seeds
Instructions...
Soak mungo beans in about a quart of water for 30 mins (one portion
of beans to two portions water). Use the water for cooking. Simmer
over low heat until about 75% of water has evaporated. Add all
the seasonings and simmer for about 20 minutes more, until the
skin is soft and begins to come off. The sauce should have thickened
like a paste. Remove beans and prepare to serve.
For the sauce: Brown the chopped onion in the oil, and add red
chili peppers until onion has carmalized. Add the bay leaf, the
curry leaves, and cilantro, as well as the rest of the spices and
simmer until browned and mixed. Pour atop beans and serve with
rice.
