Aloo Gobi

Prepare Basmati rice with this one...

Work Time: 20 mins
Total Time: 1 1/2 hours
- 2 T oil or ghee (I use olive oil)
- 1 T cumin seeds
- 3 cloves garlic, minced
- 1 inch piece of ginger, minced
- 1 large onion, minced
- 3 fresh tomatoes, chopped
- 3 med potatoes, in 2" cubes
- 1 T tumeric
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp fenugreek
- 1 med head of cauliflower
- 2 ts salt
- 2 T coriander
- 1 T mango powder
Instructions...
Heat oil or ghee and add garlic, onion, cumin, and ginger
until onions become translucent. Dice tomatoes and add to mixture
and cook on medium heat for about 20 minutes until tomatoes break
up and a sauce is made. Add potatoes, tumeric, chili powder,
fenugreek and garam masala and cook covered for about 10 minutes.
Add salt to taste and cauliflower and
continue
cooking covered for about 10 minutes more, stirring periodically
to cover the cauliflower with the sauce. Add coriander and mango
powder, stir, and remove from heat. Serve best with rice.
